TERROIR AND VINEYARD FEATURES

Area: Tollo

Altitude: 190/250 m from sea level

Soil type: medium slightly calcareous and shallow sandy

Exposure to the sun: South, South-East

Age of vines: 20 years

Density of vines per hectare: 1.600

Cultivation system: “pergola abruzzese”

Yield per hectare: 90 quintals

Harvesting: hand-picked in the second week of October

 

VINIFICATION

Process: maceration of skins in small steel tanks at controlled temperature for one month

Fermentation temperature: 25 °C

Ageing: Small steel tanks for 3 months, 12 months in wooden tonneaux, 6 months in bottles.

Alcohol: 14%

 

SERVING INFORMATION

Temperature: 18-20 °C

Food pairing: Pasta, red meats, sausages and seasoned cheeses

Aroma: intense, supple with hints of caramel and cherry

Taste: well-bodied, fresh, balanced and persistent
