Altitude: 100 m from sea level

Soil type: clay-alkaline

Exposure to the sun: South, South-East

Cultivation system: rows (filare)

Yield per hectare: 120 quintals

Harvesting: hand-picked in the second half of September

 

VINIFICATION

Process: After destemming, the must is left overnight to macerate on its own skins and then pressed and fermented at controlled temperature in small steel tanks

Fermentation temperature: 16 °C

Ageing: In small steel tanks for about 6 months at controlled temperature and in the absence of oxygen to avoid oxidation; Short aging in horizontal bottle
